We used this recipe when we used to commercially make banana bread for upmarket delis – we have made thousands to this recipe every week so we know it works and this Banana Upside Down Cake is one of my favorite recipes ever – with a strong coffee and a dash of maple syrup!! WHY THIS RECIPE WORKS For Banana Flip Cakes

Upside down cakes or flip cakes are a classic, this recipe also resembles the Bananas Foster, the caramel, cinnamon, and banana work perfectly together.This is a great way to use up your over-ripe bananas on hand and it keeps fresh for a week if covered.The caramel topping we make with butter doesn’t harden up but just delivers flavor.

HOW TO MAKE BANANA UPSIDE DOWN CAKE, STEP BY STEP:

Cut baking parchment paper to size and place on the bottom of the 9″ springform pan. Make the Caramel by melting the butter and brown sugar together – stirring until a nice bubbly brown liquid forms. Tip this into the baking tin and smooth out so it covers the surface. Banana Topping cut the bananas and place them nicely and evenly on the butter caramel mix. This is going to be the top of the cake so make an even pattern. Now Add the sliced bananas. Soften the butter (do not melt) – and combine in the food processor with the white sugar – until it is a light-colored creamy texture. Next, beat in the eggs one at a time and add a tablespoon of flour between each egg. Then add in the rest of your dry mix to the food processor followed by the ripe bananas and mix till an even creamy banana cake mix is formed. (yellow cake mix) Preheat oven to 340F for a fan oven or 350F for a normal oven (170C). Put the cake mix on top of the bananas and caramel in the tin.  Into the oven for 40-45 minutes at 170C or 340F fan bake oven (if not fan oven increase the temperature by 10 degrees) Check after 35 minutes. Take out and let the banana cake cool for 5 minutes before flipping. When I flip out this cake and see the gooey caramel run down the sides if go and pour a coffee sit down and have best banana desserts ever …. you simply can not beat banana flip cakes My other favorite cake is an ultra-moist carrot cake made in an instant pot!!  

TIPS AND TRICKS FOR MAKING BANANA UPSIDE DOWN CAKE:

Use a 9″ round spring-form pan this cake rises really well.Combine your brown sugar and melted butter in a medium heat pan – not too hot and continually stir so it does not burn.You can use ripe or overripe bananas that add a nice caramel sauce type taste to the loaf, bread or cake.Let cake rest in pan for about 5 minutes before turning onto a serving plate.

What makes this banana flip cake different is the banana layer on top, they are caramelized like ready-made bananas foster. Top it with some ice cream or cream and wow do you have heaven on a plate.
