  1. Roasted eggplant with olive oil and garlic: Preheat oven to 375 degrees F (190 degrees C). Cut eggplant into 1-inch cubes and toss with olive oil and garlic. Roast in the oven for 25 minutes, or until tender.
  2. Grilled eggplant with balsamic vinegar and honey: Preheat grill to medium-high heat. Cut eggplant into 1-inch cubes and brush with balsamic vinegar and honey. Grill for about 10 minutes, or until tender.
  3. Grilled eggplant skewers with tzatziki sauce: Skewer grilled eggplant cubes with wooden skewers and serve with tzatziki sauce on the side for dipping.
  4. Eggplant Parmesan: Preheat oven to 350 degrees F (175 degrees C). Cut eggplants into thin slices and spread on an ungreased baking sheet. Bake for 20 minutes, or until golden brown. Top each slice with grated cheese and bake for 5 more minutes, or until cheese is melted. Serve hot!
  5.
