Ingredients: 1/2 cup uncooked white rice 1/4 cup uncooked brown rice 1/4 cup vegetable broth 1 tablespoon soy sauce 1 tablespoon honey 3 tablespoons vegetable oil, divided 2 cloves garlic, minced 1 green bell pepper, chopped 3 cups cooked chicken or pork, shredded or canned (undrained) 2 cups cooked white or brown rice, rinsed and drained well 2 cups cooked black beans, rinsed and drained well Instructions:

  1. Preheat oven to 375 degrees F (190 degrees C). Grease a baking dish with 1 tablespoon of oil. Cook the white and brown rice according to package directions. In a separate bowl mix together the soy sauce, honey and 1 tablespoon of oil until smooth. Pour the mixture over the cooked rice in the baking dish. Bake for 30 minutes or until heated through. 2. In a large skillet heat 1 tablespoon of oil over medium heat. Add garlic and bell pepper and cook for 2 minutes or until tender. Add chicken or pork and cook for 5 minutes more or until heated through. Stir in cooked rice and black beans and cook for 5 more minutes or until heated through. Serve immediately in the baking dish with soy sauce mixture on top.
