Ingredients: 1 tablespoon olive oil 1 onion, diced 2 cloves garlic, minced 1 red bell pepper, diced 1 green bell pepper, diced 2 tablespoons chili powder 1 teaspoon cumin Salt and pepper to taste 4 cups chicken broth or vegetable broth (homemade or store-bought) 8 ounces can black beans, drained and rinsed well (undrained) 4 cups frozen corn kernels (thawed if frozen) 2 tablespoons chopped fresh cilantro leaves (optional) Instructions: In a large pot over medium heat, heat the oil. Add the onion and garlic and cook until softened, about 5 minutes. Add the bell peppers and cook for an additional minute. Stir in the chili powder, cumin, salt and pepper. Cook for 1 minute more. Add the chicken broth or vegetable broth and bring to a boil. Reduce the heat to low and simmer for 30 minutes. Remove from heat and let cool slightly before serving. Serve with black beans, corn kernels, cilantro if desired.


This is a perfect meal to make ahead and freeze. It is great to have it already made for those days when you don’t have time to cook or bring something to a potluck dinner party. It makes a great appetizer when served with chips or a fabulous dinner over white rice.

Chili is great for serving over white rice, but you can also serve it over nachos with corn tortilla chips. You can use it to make chili dogs (hotdogs with chili on top), as a topping for baked potatoes, as a filling for hard shell tacos served with shredded lettuce and cheddar, and topped with sour cream, or even over french fries if you want to make loaded fries.
