Bake for 15 minutes, lower the temperature to 225°F, bake for 2 hours, then turn the oven off but leave the cheesecake in the oven with the door shut for 1 hour.   After the cheesecake has been refrigerated overnight, make the ganache by heating the heavy cream and letting the chocolate chips melt, and then stirring. Transfer the cheesecake from the pan to a plate and pour ganache on top. Refrigerate for 10 minutes, then serve.
