Ingredients: 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup sugar 2 large eggs, beaten 1 cup milk 1 tablespoon vanilla extract 2 tablespoons butter, melted and cooled 8 (6-inch) round cake pans, greased and floured for the cake batter only; do not line them with parchment paper or else the batter will stick to the pan. Preheat oven to 350 degrees F (175 degrees C). Line each pan with a piece of parchment paper. In a medium bowl, whisk together flour, baking powder and salt. In a separate bowl, whisk together sugar, eggs and milk until well blended. Add vanilla extract and butter to the dry ingredients; mix until well blended. Stir in enough of the wet ingredients to make a soft dough. On a lightly floured surface, roll out the dough to 1/8-inch thickness. Cut out rounds using a biscuit cutter or an ice cream scoop (if using an electric mixer), then place them on prepared pans. Do not overfill; each cake will rise about 2 inches (5 cm). Bake for 25 minutes or until golden brown. Cool on wire racks before serving
