Ingredients: 1 cup all-purpose flour 1/2 teaspoon salt 1/4 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon cinnamon pinch of nutmeg pinch of black pepper 2 tablespoons butter, at room temperature 3 tablespoons sugar, divided 2 large eggs, beaten well and set aside (or 1 large egg and 1 tablespoon sugar) 1 cup milk, divided 2 cups shredded cheddar cheese (8 ounces) or 2 cups grated Parmesan cheese (8 ounces) or 1 cup blue cheese (6 ounces) or 2 tablespoons chopped fresh parsley leaves or 1 tablespoon chopped fresh thyme leaves Directions: Preheat oven to 375 degrees F. Grease a 9x13 inch baking dish. In a bowl, whisk together flour, salt, baking powder, baking soda and cinnamon. Add butter; mix until mixture is crumbly. Stir in sugar; mix until mixture is moistened. In another bowl, whisk together eggs and milk; stir into the dry ingredients until well blended. Pour batter into the prepared dish; sprinkle with cheddar cheese, Parmesan cheese or blue cheese if desired. Bake for 25 minutes or until golden brown.
