Ingredients: 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/2 teaspoon salt 3/4 cup (120 ml) vegetable oil, divided 2 eggs, beaten 1 cup (240 ml) sugar 3 tablespoons (45 ml) milk 1 tablespoon (15 ml) vanilla extract 6 tablespoons (90 g) red raspberry jam, cut into small pieces Directions: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan. In a medium bowl, whisk together flour, baking powder and salt. In another bowl, whisk together oil and eggs. Add sugar and milk; mix until well blended. Stir in vanilla extract. Pour batter into prepared pan; spread evenly. Sprinkle raspberry jam over top of cake. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
