Preheat the oven and line a baking sheet. Mix the berries with cornstarch, sugar, and lemon zest. Cut the pie crust into circles. Fill the centers of the pie crust with berries. Fold the edges of the crust. Brush the edges with beaten egg. Sprinkle with more sugar. Bake until golden brown. Serve, store, and enjoy!
