Ingredients: 1/2 cup (120 ml) all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder 1/2 teaspoon baking soda 1/4 teaspoon cinnamon pinch of nutmeg pinch of black pepper 3 tablespoons (60 ml) unsalted butter, at room temperature 3 tablespoons (60 ml) granulated sugar 2 large eggs, beaten well and set aside 2 cups (480 ml) whole milk, divided use 1 cup (240 ml) for brushing the buns and 1 cup (240 ml) for the filling Directions: Preheat oven to 350°F. Grease a 9-inch baking pan with butter. Sift together flour, salt, baking powder, baking soda and cinnamon. Add to butter; mix well. Stir in nutmeg and black pepper. In a medium bowl, whisk together butter and sugar until light and fluffy. In another bowl or a small saucepan over low heat, whisk together eggs and milk until combined. Pour batter into prepared pan; spread evenly. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Let cool in pan on a wire rack for 5 minutes before slicing into buns.
