Ingredients: 1 cup sugar 1/2 cup cornstarch 1/4 teaspoon salt 2 eggs, beaten 1/4 teaspoon peppermint extract (or 1 tablespoon extract from a peppermint oil) 3 tablespoons butter, melted and cooled 2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon baking soda Instructions:

  1. Preheat oven to 350 degrees F. Grease and flour an 8x8 inch baking pan.
  2. In a medium bowl, combine sugar, cornstarch, salt and eggs; mix well. Stir in peppermint extract and melted butter. Stir in flour and baking powder; mix well. Pour batter into prepared pan; bake for 25 minutes or until a toothpick inserted into the center comes out clean. Cool brownies on a wire rack for 10 minutes before serving.
