Ingredients: 1 1/2 cups all-purpose flour 1 teaspoon baking powder 1/4 teaspoon salt 3/4 cup sugar 2 eggs, beaten 1 cup milk 1 tablespoon vanilla extract 2 cups (8 ounces) unsalted butter, at room temperature, cut into small pieces 3 cups granulated sugar, divided 2 large eggs, beaten well and set aside to cool slightly before using 1 cup dark corn syrup (Crispix) or 2 tablespoons light corn syrup (Lemon Crispix) for brushing on top of cake before serving. Cake Directions: Preheat oven to 350 degrees F. Grease and flour an 8x8 inch baking pan. Sift together the flour, baking powder and salt; set aside. In a medium bowl, whisk together the sugar and eggs until well combined. In a separate bowl or in another large bowl if using electric beaters (or hand beaters), whisk together the milk and vanilla extract until smooth. Add the butter to the dry ingredients; mix until well combined. Stir in 1/4 cup of the granulated sugar and stir just until blended; set aside. Add enough of the remaining granulated sugar to make a soft dough; mix until smooth again. On a lightly floured surface, roll out dough to about 1/8-inch thickness; place in prepared pan. Sprinkle evenly with 2 tablespoons of the corn syrup or lemon Crispix; bake for 25 minutes or until golden brown on top and a toothpick inserted into center comes out clean. Cool cake before serving with remaining corn syrup or lemon Crispix brushed on top
