Ingredients: 1 cup (2 sticks) unsalted butter, at room temperature 1 cup granulated sugar 2 large eggs, beaten 1 teaspoon vanilla extract 3 cups all-purpose flour 1 teaspoon baking powder Pinch of salt 6 cups champagne, divided (4 cups for the batter and 4 cups for the frosting) Directions: Preheat oven to 350 degrees F. Grease and flour a 9x13 inch baking pan. In a medium bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at a time, then stir in vanilla. In another bowl, whisk together flour, baking powder and salt. Add dry ingredients to wet ingredients; mix until well blended. Mix in champagne until well combined. Pour batter into prepared pan; spread evenly. Bake for 25 minutes or until a toothpick inserted into the center comes out clean. Cool cake before frosting with your favorite frosting (I like whipped cream).

How to Make Pink Champagne Cupcakes

Heat the champagne to create a reduction. Whisk the flour, baking powder, and salt together. Whisk the sugar, oil, and butter together. Add the eggs, then mix thoroughly. Mix the wet and dry ingredients. Add the reduced champagne, and don’t over mix. Pour the batter evenly into cupcake liners. Bake.

Time to make the buttercream!

Whisk the butter until smooth and creamy. Add powdered sugar. Stir in the reduced champagne. Add pink gel dye. Pipe the buttercream onto completely cooled cupcakes. Add sprinkles!
