Ingredients: 1 cup (2 sticks) unsalted butter, at room temperature 1 cup granulated sugar 2 large eggs, beaten 1 teaspoon pure vanilla extract 3 cups all-purpose flour 1 teaspoon baking powder Pinch of salt 2 cups pumpkin puree (I used canned) Directions: Preheat oven to 350 degrees F. Line a baking sheet with parchment paper. In a medium bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at a time, then stir in vanilla. In another bowl, whisk together flour, baking powder and salt. Add the pumpkin mixture to the butter mixture and mix until just combined.
