Ingredients: 1 pound pork tenderloin, cut into thin strips 1 tablespoon vegetable oil 1 large onion, diced 2 cloves garlic, minced 3 green bell peppers, diced 2 cloves garlic, minced 1 teaspoon ground ginger 1 teaspoon ground cumin Salt and pepper, to taste 2 cups chicken broth or water 3 tablespoons soy sauce or 1 tablespoon rice vinegar (or 1 tablespoon honey) 4 tablespoons vegetable oil or 2 tablespoons butter, melted and cooled slightly before use 1 cup frozen peas or 1 cup fresh peas, thawed and drained if frozen overnight (optional) 2 cups cooked white rice or 1 cup cooked brown rice (or 2 cups uncooked white rice)
Instructions: In a large skillet over medium heat, heat the oil. Add the onion and garlic and cook until softened. Add the bell peppers and garlic and cook until softened. Stir in the ginger, cumin, salt and pepper. Cook for about 5 minutes more. Add the chicken broth or water to the skillet. Bring to a simmer and cook for about 5 minutes more. Stir in soy sauce or vinegar if desired. Cover the skillet with a lid and simmer for 30 minutes to an hour. If using frozen peas or fresh peas as an ingredient (not included in this recipe), thaw them before adding them to the skillet; otherwise they will be cold when added to the stir-fry. Stir in cooked white rice or brown rice according to preference before serving hot with your favorite dipping sauce!

Korean Pork Stir Fry

This Sweet and Spicy Korean Pork Stir Fry has strips of roast pork ( or marinated pork loin) cut to about 1/4 inch thickness. that are seared with fresh vegetables and tossed with a sweet and spicy sauce that includes plum jam and the Korean paste gochujang. This is lip-smacking good! This Korean pork stir fry has vegetables like carrot, red pepper and can be served with steamed rice. Kids actually love it as it is not too spicy as the heat is toned down by the sweet soy sauce. (You can also add a little brown sugar at the end if the dish is too hot – it will reduce the spicy taste) This is a tasty meal that comes together in no time and packs a major flavor punch.
