Ingredients: 1 pound pork loin, cut into 1-inch cubes 1/2 cup apple cider vinegar 1/4 teaspoon ground ginger 1/4 teaspoon ground cinnamon 1/4 teaspoon ground allspice 3 tablespoons olive oil, divided 2 cups cooked white rice, rinsed and drained 2 cups frozen peas, thawed and drained 3 tablespoons chopped fresh parsley or 1 tablespoon dried parsley Instructions:

  1. In a large Instant Pot or Dutch oven, combine the pork cubes, apple cider vinegar, ginger, cinnamon, and allspice. Heat over medium-high heat until the pork is browned and cooked through (about 10 minutes). Remove from the heat. Pour in 3 tablespoons of oil and swirl to coat. Add the rice and peas. Stir to combine.Lock the lid on top of the pot and cook for 20 minutes or until heated through. Remove from heat and let cool for 5 minutes before serving. Sprinkle with chopped parsley before serving.
