Ingredients: 1 large onion, diced 1 red bell pepper, diced 2 cloves garlic, minced 1 teaspoon ground cumin 1 teaspoon smoked paprika 1/2 teaspoon chili powder 1/4 teaspoon ground coriander pinch of salt (optional) pinch of black pepper (optional) 3 cups chicken broth or vegetable broth (homemade or store-bought) 1 can black beans, drained and rinsed 1 can corn, drained and rinsed 1 can kidney beans, drained and rinsed 1 can white kidney beans, drained and rinsed 2 tablespoons olive oil or cooking spray 2 cups cooked white rice (or any other cooked rice) Directions: In a large Instant Pot or Dutch oven over medium heat, sauté onions and peppers in olive oil until softened. Add garlic; sauté for another minute. Stir in cumin, smoked paprika, chili powder, coriander and salt (if using). Add chicken broth or vegetable broth to pot. Bring to a boil. Cover Instant Pot with lid and cook on low for 6-8 hours. Remove from heat; let cool for 5 minutes before serving. Enjoy!
