Ingredients: 1 pound spaghetti, cooked 1/2 cup chopped onion 1/4 cup chopped celery 1/4 cup chopped red pepper 3 tablespoons olive oil or butter salt and pepper to taste 2 cups chicken or vegetable broth or water 1/4 cup white wine vinegar or apple cider vinegar 3 tablespoons Dijon mustard powder or 1 teaspoon dried thyme leaves (or 1 tablespoon fresh thyme leaves) 1 tablespoon honey or agave nectar (or 1 teaspoon honey) Instructions: In a large pot, cook the spaghetti according to package directions. Drain any excess water and set aside. In the same pot, sauté the onion, celery, red pepper and butter over medium heat until softened. Add salt and pepper to taste. Add the chicken broth or water and bring to a boil. Reduce heat to low and simmer for 10 minutes. Stir in the white wine vinegar or apple cider vinegar and Dijon mustard powder or thyme leaves. Simmer for another 5 minutes until heated through. Remove from heat and let cool slightly before serving with your favorite pasta salad toppings (chicken, fish, tofu, etc.).
