 Sweet Hawaiian Chicken   Yield:  8 - SERVINGS   Prep Time:  15 minutes    Cook Time:  1 hour 10 seconds    Total Time:  1 hour 15 minutes 10 seconds        			Print		     Ingredients   						4 skinless, boneless chicken breasts cut into 1 inch pieces					  						Salt and pepper to taste					  						1 cup cornstarch					  						2 eggs, beaten					  						3 tablespoons vegetable oil					  						1 cup pineapple juice (from the drained pineapple tidbits can)					  						⅓ cup brown sugar					  						⅓ cup soy sauce					  						2 garlic cloves, minced					  						1 teaspoon sriracha (optional)					  						½ tablespoon cornstarch					  						1 red bell pepper, chopped					  						1- 20 oz can pineapple tidbits, drained 					  						3 green onions, chopped					     Instructions Preheat the oven to 350 F.  Season the chicken pieces with salt and pepper.  Dredge them in the cornstarch until fully covered.  Dip each piece into the beaten eggsHeat the oil in a large cast-iron or oven-safe skillet and cook the chicken pieces until brownedMix the pineapple juice, brown sugar, soy sauce, minced garlic, sriracha, and cornstarch until well combined, and add this sauce to the chicken.  Mix in the chopped red bell pepper and pineapple tidbits to the skillet as well.  Bake for one hour, mixing every 15 minutes to cover the chicken with the sauce.
